Prof. Dr. Anthonie (Ton) Baars: Differentiation of Biodynamic and Conventional Farm Milk Quality and the Impact on Questions of Human Health
Results of experimental work done in Germany will be presented. At first, the question about farm milk differentiation will be tackled: with which methods can we differentiate milk qualities from different origins (biodynamic-conventional, and intensive versus extensive holdings)? Secondly trials have been done to answer the questions of fodder (wheat, fodderbeat; pasture hay and ley hay), and on the effects of horns on milk quality. Last but not least, in co-operation with a specialized dermatologist milks are tested on atopic children in a double blind placebo control trial.

Raw Milk Perspectives in Europe will give the participant an overview of the legal status of raw milk in these countries, the traditional role of raw milk in the diet, traditional fermented dairy products in usage today, general attitudes of the public to raw milk consumption, sales of raw milk, and innovative ways of providing safe and nutritionally wholesome milk to the public, with special focus on the raw milk situation in the Republic of Slovenia. Common practices of farmers raising animals for milk production will be discussed as well as use of hormones such as rBST (bovine growth hormone). Media and governmental promotion of raw milk sales and public awareness regarding the difference in nutritional value between pasteurized and homogenized milk will also be discussed.

Raw milk is currently one of the most debated basic foods. It symbolizes for many a return to common sense, be it in farming, nutrition or health. The demonizing of raw milk goes hand in hand with the increase in corporate control of our food production and food supply.
Joining forces requires a new connection between consumer and farmer. It requires a new approach of co-operation between those who grow the food and those who need the food. This is not anymore a farmer’s battle this is a dangerous attack on the entire society. Finding solutions to take back the responsibility for our food will become the key for the survival of generations to come.
